The Ultimate Veggie Sandwich
The summer is the perfect time to take advantage of seasonal flavors like juicy tomatoes and crisp lettuce. Today’s ultimate veggie sandwich does just that. Not only is this veggie sandwich delicious but it is also super quick and easy to make.
When Matt and I were on our honeymoon in California, we enjoyed some of the most delicious farm-to-table food I’ve ever had. One of my favorite meals was lunch at the Lucia restaurant at the Bernardus Lodge and Spa in Carmel Valley.
I had the garden sandwich filled with ripe tomatoes, lettuce, and other delicious veggies fresh from the garden. When you think of a veggie sandwich, you probably think it won’t be filling. However, this sandwich was a 10/10 and a recipe I knew I would have to try and recreate at home.
Because fresh produce is the star of the show, this sandwich tastes best when you add multiple layers of ripe and delicious veggies.
The Ultimate Veggie Sandwich Recipe:
Makes 2 sandwiches
4 slices Everything Sourdough Bread - I got mine from Aldi
1 ripe tomato, sliced
1 cucumber, thinly sliced
1 avocado, thinly sliced or mashed
Mixed greens
Mayonnaise, to taste
Instructions:
Thinly slice your tomato, cucumber, and avocado. Set aside.
In a non-stick pan, take two slices of bread, coat one side with butter and then grill until golden brown.
Take the bread and lay it on a plate, golden side down. Add mayo and then a layer of tomato slices. Sprinkle salt on top of the tomatoes and then add cucumber, avocado*, and top it off with a handful of mixed greens. Serve immediately.
*An alternative, to add a bit of extra flavor, is to use the avocado to make a quick and easy spicy guacamole. Mash an avocado in a bowl and add minced garlic, onion powder, lime juice, and red pepper flakes. Use this in place of mayonnaise.
