My Favorite Summer Recipes

I’ve become a total foodie ever since I started college and moved into my own apartment. I LOVE cooking and love finding and sharing new recipes with others. Recently I’ve been sharing a lot of my meals on Instagram stories and have received tons of DM’s asking for the recipes. So, I figured I’d round-up my favorite summer recipes for you guys that I know you’ll love just as much as I do.

This was one of my most requested recipes to share because, yes, you use ramen as in the college survival ramen noodles. (Ya’lls Instagram DM’s were cracking me up!) My mom made this salad all the time when my siblings and I were younger, and I am just as in love with the crisp bok choy and crunchy ramen now as I was then.

Mango Salsa

This mango salsa is super yummy and filled with so many different flavors; there’s sweet, salty and spicy. Pair this salsa with tortilla chips for a refreshing summer snack or overtop flounder to complete a meal.

Quinoa Salad

If you’ve been following me for a while, you’ll know I’m a big fan of quinoa. During the school year, I’d make a massive batch of quinoa salad about every two weeks and eat on it for the week. Tip: If you want a little extra protein you can shred a rotisserie chicken to add.

Grilled Peaches

There is no better summer treat than grilled peaches with a scoop of vanilla ice cream. We haven’t made these in years, but after someone posted them on their Instagram stories last night, they’re definitely back on my list. They are sweet, crispy and absolutely delicious.

Bruschetta

Every time I sit down at a restaurant and see bruschetta on the menu, I do a little happy dance. Even though it is one of my all-time favorite appetizers, I’ve never actually tried to make it at home. I stumbled upon this recipe a couple weeks ago and cannot wait to make it and share with you guys what I think. I’m definitely a fan of bruschetta recipes that include a balsamic glaze.
